ACR Bravo Pizza Oven – il Bambino

The ACR Bravo pizza oven is the smallest wood-fired oven in their premium outdoor oven range. Meaning ‘the child’ in Italian, this small pizza oven is capable of cooking pizzas up to 14″ in diameter. The Bravo has been designed in Italy to offer authentic Italian cooking with a working temperature of 250º C and capable of reaching temperatures in excess of 400º C.  The Bravo weighs only 27 Kg and has a detachable flue for easy storage. A pre-insulated pizza dome and insulating bottom fire bricks help to maintain cooking temperatures inside the firebox and minimise safe distance to combustible materials externally. Chamotte firebricks, which sit on top of the insulating bottom bricks provide an even cooking area to give your pizzas a nice crispy base.

Placing the Oven Safely

Please note that this appliance is designed for outdoor use and should never be used indoors or in an enclosed area. The ACR Bravo pizza oven should always be placed on a flat, stable surface that is able to sufficiently support the weight. As this appliance is designed to be portable, please make sure that if you are placing it on a table the top surface is non-combustible and heat resistant. The insulating firebricks will help to reduce the temperatures off the base of the oven, but they can still exceed 50º C and could leave scorch marks on wood or other combustible materials.

Always allow at least 50cm clearance all around the oven and at least 1m in front to any combustible materials.

 

Getting Things Fired up

Only good quality, dry wood logs and kindling can be used in your Bravo oven. Do not use flammable liquids or other fuels, including house or smokeless coal. The drier the wood you use, the less smoke and soot will be created during burning. Logs should always be split to create a greater surface area and no longer than 9″. Kiln dried logs at less than 15% moisture are recommended and good quality fuel is essential for reaching and maintaining the heat needed to cook the perfect pizza. Do not burn treated, painted or scrap wood as this can leave harmful chemicals on your food.

Use the fire door supplied to help control the air flow within the oven. Removing the door will allow more air in and cause the fire to burn harder, increasing the temperature. Replacing the door will slow the air intake down and help to maintain a stable cooking temperature.
